Cream of Tomato Soup
 
Ingredients:
 
1  qt  tomatoes, cut
2  onions
1  garlic clove
1  stalk of celery
1  small bunch of parsley
2  cups beef or vegetable stock
1/4 tsp. allspice
1  tsp. salt
1  dash of pepper
1  tsp. sugar
1  Tbsp. butter
1  Tbsp. flour
1  pt. cream
2  slices of bread
1  dash of  fresh dill
 
Directions:
 
In a large stock pot, boil tomatoes, onions, celery, garlic and parsley for one hour. Drain thru sieve to remove all seeds and large chuncks of vegetables. Return to stove and add seasonings.  Thicken soup with butter rolled in flour.  Add the cream and stir well.  Serve with toasted bread  or croutons and fresh dill.
