 Mexican Chicken Quesadillas(Makes 4) Adaptable to children 3-14yrs old with parent participation
Ingredients: 8 flour tortillas 2 cups shredded cheese, any type Grilled chicken, pre-cooked ½ cup sour cream ½ cup salsa Extra virgin olive oil
Directions: Paint 1 side of 4 tortillas with oil and place them next to each other, oiled side down, on a large cookie sheet. Sprinkle ¼ cup of the shredded cheese on each of the tortillas. Top with chicken, salsa, and sour cream, if desired. Sprinkle second ¼ cup of the shredded cheese on top of the chicken mixture, and set another tortilla on the top. Brush tops with extra-virgin olive oil. Bake 10 minutes in the oven to melt cheese and crisp up tortillas. Cool quesadillas 5 minutes to set then cut each quesadilla into 6 pieces.
