Baked Macaroni and Cheese

(Serves 8)
 Adaptable for 3-14yrs old with parent participation

1 teaspoon salt, plus more for macaroni
2 cups elbow macaroni
2 eggs, beaten
2 cups evaporated milk
½ cup butter, melted and divided
1/4 teaspoon cayenne pepper
2½ cups grated sharp cheddar
1 cup breadcrumbs
1 teaspoon paprika
¼ cup grated Parmesan

Nonstick cooking spray
Baking Dish

Directions:

Preheat oven to 350 degrees F.
Spray baking dish with nonstick cooking spray.
Bring a large pot of salted water to a boil over high heat.  Add the macaroni and cook, stirring occasionally until it is almost tender, 10 to 12 minutes.  Drain, rinse with cold water, and set aside.
In a large bowl, beat the eggs with the evaporated milk, ¼ cup melted butter, cayenne pepper, and a teaspoon of salt.
Put the macaroni into baking dish and top with the cheddar cheese.  Pour the milk mixture over the macaroni and cheese.
In a small bowl, mix the breadcrumbs, paprika, remaining ¼ cup of melted butter, and the Parmesan cheese.  
Sprinkle the breadcrumb mixture over the macaroni and bake until brown and bubbly, 25 to 30 minutes.  Serve warm.
